Budget meal ideas

Pay day seems like it's never going to arrive,  but just because you're broke, doens't mean you have to eat beans.

Pay day is within reach, but not before you have to endure those last three or four panic-stricken days  which seem like an eternity.  The end of the month broke-blues are here.

One of the most frustrating things about being broke is not knowing what you’re going to make for dinner.  If there is nothing left in your fridge, you might think that means on toast is all you can afford, but it’s not.

In our ongoing quest to help  you better your budget, we went in search of delicious and simple recipes that will all cost you less than R50. The best part is that these recipes can feed a family of four or feed a single person for two days!

Quiche – with a filling of your choice

Quiche is simple, light and very easy to make and the best part is you probably have most of the ingredients in your fridge already.

To make a delicious quiche, you’ll need the following:

Base:

Pre bought Puff Pastry

Filling:

1 large onion, finely chopped
Spinach/feta/bacon/chicken/mushrooms or whatever you'd like to put inside
2-3 large eggs
250ml milk
125 ml cream
30 ml self-raising flower

You can make the base yourself, if you like, but the pre-bought puff pastry will set you back just R9.  Roll out the pastry thinly and line a round pan with it. Preheat the oven to 180 degrees and bake for 10 minutes.

For the filling: Fry the onions in the butter and set aside (for a healthy option, use olive oil or a non-stick pan and fry without any fats).  If you are adding bacon/chicken or spinach, cook these ingredients first before adding them, remove everything from the heat once cooked and set aside. Now mix together your eggs, milk, cream and flower. Add a bit of salt and pepper to taste and add the meat or veg filling to the mixture. Pour the mixture into your crust and bake for 20 - 30 minutes until it turns golden.

How much will the quiche set you back? If you’ve got  all the ingredients, barring the puff pastry in your house already: R9, for the pastry.

If you need things like eggs, cream and a filling – you’ll be paying around R35 for a whole quiche.  Serve it with toasted bread to bulk it up. If you are single, that’s dinner and lunch sorted for two days.
